I'm starting to optimize a real estate website, but I am facing some problems, the site is 'fed' by a windows software, where the client, access this program and register and/or change the pages of available houses or properties, the site is built using PHP, but the domain is hosted on windows server, where it has an emulator that converts this PHP to server windows and then shows the 'HTML' pro user, and that 'time' is taking around 7 to 12 seconds which is too slow.
My question,
If I host the website on Linux platform, will it help me to improve the loading speed of the website?

The best way to know this is by testing; The most important one is whether the database is the client database or MySQL database. If it is MySQL and the server is good, I do not think it will reduce much unless it implements a cache.
This is a rather complex answer because it depends on a series of variables:
1. Quality of the source code;
2. Type of connection;
3. Quality of the server;
4. Absence or presence of the cache.
Anyway, the best option is to test and optimize the code, page size, images size for better loading time.
Changing the web server to Linux can bring improvement, but not much because the delay may not be caused by the web-server (Linux or Windows) but by the conversions in the middle of the path and if this is really the exchange, it Will advance anything, if I understand the question.
Try to see where the bottleneck is, where it is the point it takes to make the right decision.
It will not improve, you said the software is windows right? If you move to Linux, you may not even recognize it. I advise you to work on the website, not to use software for remote access. You could develop a dashboard, for the client to manage their entries, that panel would stay on the web, hosted in a subfolder or something. The time is right, it will take a while even as you are using primary (single-key) accesses.
As Pravin quoted, you can optimize time through code by perfecting it but for that, the software has to be your own or the whole PHP code. You'll get more work done with this, but if you want to make the software available for updates and inserts, you'll have to work a little bit more.

Thanks for the comments, the store is coded in PHP and was developed by another company in 2016 and so far no improvement has been made in the system or programming thereof, about the loading time, I did a test in the Pingdom, and there the longest time is in the www where the wait time is in 5s and the total loading of the page is of: Tested from Amsterdam, Netherlands on April 6 at 11:00:15

I believe this is something that does not let my website stay on the front page. Before I started to move it was on 5 and most of the time on the 7th page of google search, today it is already on the 2nd page, but I want it to be on the first page, and I noticed this loading time, which I believe I mean that's relevant to google, right? Someone has some more tips so I can improve?
I tried to use Gzip but it does not work because the server is on windows, and when I try to compress the static files using a web.config file for windows server, it does not work, it gives 500 error, I tried to go deeper and change it Direct on the hosting server but could not change the configuration.

A 700Kb page (almost 1MB) is sure to be negatively influencing SEO.
Does the page have lots of graphics? Are the graphics compressed? (JPG?) I've seen sites that might have been loaded with less time but had much larger .PNG images than their compressed (JPG) counterparts.
It was like I said, one should not use remote access to the website but if it is some good software, can dp. Work with the normal panel or systems.
If the On-page SEO is already done, then start building more high-quality backlinks (link-building) from high DA sites if possible sites with content from the same area, will help you in getting better positions.
The loading speed is as if you had a negative score or score that although it is negatively influencing, you can compensate for this negative point by doing more link building.
